Khandvi recipe

Ingredients:

  • 200gms gram flour
  • 3 cups buttermilk 
  • 1/4 tsp turmeric powder
  • 1 tsp chilli powder
  • 1/4 tsp coriander powder
  • 1/4 tsp asafoetida
  • 2 tsp oil
  • 1 tsp mustard seed
  • 1 tsp sesame seed
  • 3 tbsp chopped coriander
  • Salt to taste

Method for khandvi recipe:

Mix all the ingredients in a bowl that you want to cook in. Heat the pan on low flame and pour the mixture in the heated pan. Stir continuously till it becomes a thick gravy. Once it has turned into gravy, turn the heat off and spread a spoonful of mixture on a flat surface. Let it cool down for about 10mins. Slice the cooled batter into rows and start rolling them into thin rolls. Once they are roll place it into a serving bowl. For the seasoning/tadka, heat the oil and add mustard seeds and sesame seeds. Once the seeds have crackl, add asafoetida and pour the seasoning on the rolled khandvis. Handvo recipe

(Makes 8-10 handvo)

Ingredients:

  • 500gms handvo atta (Rice: 250gms + Urad dal: 150gms + Chana Dal: 50gms) 
  • 250 grams lauki (Bottle Gourd) grated
  • 50 grams green peas
  • 1 carrot (grated)
  • 1 chopped onion
  • 3 chopped green chillies
  • 1 tsp chopped garlic
  • 1 tsp ginger
  • 3 tbsp chopped coriander
  • 7-8 chopped curry leaves
  • 4tsp sesame seeds
  • 4 tsp mustard seeds
  • Oil to cook
  • Salt to taste

1 cup curd or buttermilk

Method for Handvo recipe

Mix Handvo atta with curd or buttermilk and some water and salt in a bowl. Mix it well till it gives you a paste-y consistency (like a dosa batter). And leave it to ferment for six-seven hours. Mix grated lauki, grated carrot, chop onions, chopped curry leaves, green peas, chop chopped ginger garlic chilli paste into the batter. handvo recipe.

For seasoning or tadka

Heat the oil in a bowl add mustard seeds and sesame seeds and wait for it to crackle. Once done, add to the batter. Mix everything well and add coriander to the batter. Heat a pan, add 1tbsp of oil and then add mustard seeds, sesame seeds and let it crackle again. Add one scoop of batter to the pan. Close the pan with a lid and leave it to on low heat for about till it gets golden brown. Then flip and cook till the other side is. Kakdi na Puda recipe (Cucumber chilla)

(Serving for 2 people)

Ingredients:

  • 300 gms mixed atta (To be roaste and ground: Rice: 100gms + toor dal:  60gms + wheat: 30gms + chana dal: 30gms + urad dal: 30gms) 
  • 2 medium-sized cucumber (grated)
  • 2tsp freshly made or store bought ginger garlic paste
  • 2 tsp finely chopped chilies
  • 3 tbsp coriander 
  • 1 cup buttermilk or curd
  • 1/2 tsp turmeric powder
  • Salt to taste
  • Oil

Method for kakdi na puda recipe

Take the atta in a bowl, add grated cucumber, ginger garlic paste, finely chopped chilies, turmeric powder, salt and buttermilk. Mix it well. The batter needs the same consistency of dosa batter. Heat the pan and spread the batter like a dosa.  Add some oil around it to crisp up the edges. Flip it and coat it with oil to cook through. Cook until it turns a crispy golden brown. Serve it hot with coriander or pudina chutney or ketchup.

Khichu recipe

Ingredients:

  • 1 cup rice flour
  • 1 tsp finely chopped chillies
  • 4 cup water
  • 1/2 tsp cumin seeds
  • Salt to taste
  • 2 tsp oil 
  • Chilli powder to garnish

Method:

Heat water in a vessel that you want to cook in. Add cumin seeds salt and finely chopped chillies in the water. Bring water to boil and then add rice flour and mix it well. khichu recipe. Heat a pressure cooker on a burner, add some water and put the vessel in the pressure cooker. Remove the whistle and close the lid. Cook it on high flame for 25mins. Sev Khamani recipe

Ingredients:

  • 15 khaman dhokla
  • 2 tbsp chopped coriander
  • 1 tbsp oil
  • 2 tsp mustard seeds
  • 2 tsp chopped garlic
  • 1/4 tsp asafoetida
  • 2 tbsp pomegranate seeds
  • 2 tbsp grated coconut
  • 3 tbsp sev

Method for Sev Khamani recipe

Crumble the dhoklas and keep aside. Heat the oil in a pan and add mustard seeds. Sev Khamani recipe. Once the mustard seeds crackle, add chopped garlic and asafoetida and sauté on medium heat for a few seconds. Spread it over the crumpled dhokla and mix well. Dudhi na Muthiya recipe

(Serving for 4 people)

Ingredients:

  • Grated lauki or bottle gourd (350gms)
  • 1 cup cooked rice 
  • 1/2 cup wheat flour
  • 1/2 cup gram flour
  • 1 tsp ginger 
  • 1/2 tsp chili powder
  • 1 tsp chillies
  • 1/2 tsp turmeric powder
  • 1/2 tsp coriander powder
  • Salt to taste
  • 1 tsp amchur powder
  • 3/4 tsp asafoetida/hing
  • 1 tsp sugar
  • 4 tbsp chopped coriander 

Method for Dudhi na Muthiya recipe:

Mix all the ingredients in a bowl to make a dough. Roll the dough like kebabs and place them on a steaming plate. Heat the cooker and add two glasses of water. Place a steel ring in the cooker and put the steaming plate (jhali plate) on the ring. Close the pressure cooker lid without a whistle. Cook it on high flame for 35mins. Then cook it on a low flame for an extra five minutes. Once cooled down, remove the muthiya from the steaming plate and cut into small pieces. dudhi na muthiya recipe.

For the seasoning/ tadka

Heat the oil in a pan and add mustard seeds and sesame seeds. Once it starts crackling, add asafoetida and then the muthiya and mix well. Garnish with chopped coriander and serve it hot.

Dabeli recipe

(Makes 8 Dabeli)

Ingredients:

  • 10 medium-sized boiled potatoes
  • 1 chopped onion
  • 2 tsp Dabeli masala
  • 4 tbsp chopped coriander 
  • 6 tsp tamarind chutney
  • 1/2 cup pomegranate
  • Oil
  • 1/2 cup roasted peanuts
  • 1/2 cup sev
  • Salt to taste
  • Butter to cook
  • 8 Dabeli Pav

Method for Dabeli recipe:

Mash the boiled potatoes. Add dabeli masala, salt, tamarind chutney and coriander. Mix well. Heat oil in a pan on low heat and add the mixture of boiled potatoes. Add pomegranate and roasted peanuts in the mixture. Mix well. gujarati snack recipes.

For the pav, cut one-fourth. Apply tamarind chutney on the inside of the pav and fill the potato mixture. Heat the tawa and place the filled pav and roast in butter on all sides. Cover the sides with roasted peanuts. Serve it hot with chopped onions, roasted peanuts and sev on the side.
